A common street food in Trinidad and Tobago. It is a sandwich made with two bara (flat fried bread) filled with channa (curried chick peas). Topped with shadon beni, cucumber, tamarind, and extra pepper sauce (ranging from a dash «slight» to much more), this delicacy is the most popular fast food in Trinidad and Tobago. It is usually eaten for breakfast, and sometimes lunch, but can be a late night snack as well.

History

Established in 2014.

7 years after moving to San Jose, Trini Johann Mahabir realized that there was a dearth of Caribbean people, especially Trinis, in comparison with other major metropolitan cities in the US like New York and Los Angeles. He started yearning for a way to replace the flavor that was missing from the spice of his daily life in San Jose, and that was of home in Trinidad. So the idea to make doubles right here in Northern California was born. And it wasn’t just about delicious food, it was a quest to find a community that felt like home, where Trinis could come and lime with each other as well as attracting all Caribbean people alike. When Johann decided to found Trini Doublez, he decided on his right hand lady Danielle Milner to be the head chef. Between their determination and Johann’s refined Trini tastebuds rejecting every non-​authentic flavor, the recipes for Trini Doublez arose.

The word about doubles being sold in the Bay Area got around fast, and they’ve never looked back!
