History

Tsar Nicoulai Caviar™
Mats and Dafne Engstrom began working in the gourmet food business by exporting crayfish from the Sacramento River to their native Sweden in 1975. Since then, they have become internationally recognized as pioneers in farming sturgeon to produce caviar, and have been instrumental in educating caviar producers world-wide on the methods of sustainability. In 1985, Mats and Dafne were invited by the People’s Republic of China to help develop sturgeon hatcheries and open its caviar market. Mats and Dafne traveled to the Amur River, bordering Manchuria and Siberia every year for six years to harvest over 2 tons of caviar per year. Today, thanks to the Engstrom’s expertise, China is one of the top producers of caviar in the world.
In March of 2004, Tsar Nicoulai opened its first ever retail space in the historic San Francisco Ferry Building. The café offers a full retail selection of Tsar Nicoulai products
