Fortress: Solitude & San Francisco Pop Up

Ive been a fan of Eddie Lau’s Dux Workshop Pop up for some time now. He went on a fairly long hiatus, and has now reappeared with a new concept called Fortress: Solitude & SF. He had traveled, gotten inspired, gotten healthy and has started his cooking again. Was very happy to see that he really hasn’t missed a beat. The first seating might not have had the smooth flow that he’d probably liked but as we were in the 2^nd and got pushed back a bit, besides the late start, it went well. An excellent showing as always. The new collab with Luis Villavelasquez on desserts is an evolution of this pop up. Working on the line form Dux was Susanna from the Battery/​Hapa Ramen too. Good to see some old faces. The staff of 20^th Century were awesome and definitely took care of us. Totally looking forward to the next incarnation.
