Our knife exchange program provides service to large & small restaurants, delis, hospitals, food markets, convalescent homes and more in both San Diego and south Riverside counties.

We provide all knives required to meet your specific needs.

Utilizing knives that are always sharp reduces the risk of serious accidents which are frequently a result of using dull tools. Not only do they reduce the risk of accidents, but they increase your productivity.

It is very cost effective to no longer have to purchase the knives, sharpen them yourself, or send them out to be sharpened.

We will pick up the knives previously delivered by us in exchange for a set of newly sharpened tools, as per an agreed upon schedule. The schedule, quantity and types of knives can be changed to meet your needs.

Our standard knives have black handles. However, if you wish knives with colored handles, to avoid cross-​contamination, they are also available.

History

Established in 1912.

Our family started sharpening knives in 1912 in Italy. When the family immigrated to the United States, it was only natural to start the same business here. It was part and parcel of the family’s history, not to be left behind.

Moving the family and the business westward, a bit at a time, we opened in San Diego in 1963.

As cutlery and equipment have changed over the years, so has our business. We constantly stay aware of changes that may affect us and those we provide services to.

The one thing that has never changed is our respect for, and our commitment to, our customers.

Went in here to have my scissors sharpend. I dropped them off and they were ready within a day. I got a quote of $ 5 and when I got there she had me look at the scissors and I paid the $ 5. I was in and out with in 1 minute. Very pleased with the service.

If you are any kind of professional knife using person with any experience and you want to be INSULTED, this is the place to go. I had visited this place about three times and had some knives done, always indicating I wanted to use their knife service as an individual. Each time I did this it sounded like no problem. So when I finally went in to «sign up» I was 1) discouraged from using their service. 2) Was told the knives I was using at work were good quality knives so what seems to be your problem, bud. 3) Was really insulted by being told instead of using the knife supply service, to bring in the knives I am now using instead and they will show me some «tricks» with a steel. REALLY? After the steel suggestion I had to just leave. Whoever this person was I talked to did a good job of getting rid of me and insuring I never step foot in this place and insure I let everyone I come in contact with who might be thinking of using this place to not do so as it is run by unprofessional people.

When I saw my knives I almost wanted to cry. They wrecked them. $ 480 worth of knives (4). Please go to a shop that has fine sharpening stones. :(

When they pick up my slicer the guy said the cost for fixing will be no more than $ 150 they call me next day saying will be $ 190 I disagree and they said ok we will charge 150 but the service will not be complete, few days later they bring my slicer with missing parts the guy said I’m sorry I’ll bring the parts in a couple days, after one month still waiting for that parts

I have come here in total of about 5 times over the last few years and they always do a great job! My knives are always ready for next day pick up with a sharp clean edge that usually lasts about 6 – 8 months.
The only reason I rated this a 4 star is because they have raised their prices. So now when I come in to get my knives sharpened (which is always 8 – 10 knives ranging in sizes) it definitely costs a pretty penny. It is now $ 5 a knife when it once was $ 3-​$ 5 a knife depending on the size.
Would definitely recommend trying this place out.

I usually sharpen my own knives except the serrated ones. I do not allow anyone to use my Shun knives but recently I discovered the tip on one of my chefs knives was broken. Of course the culprit is unknown (and if I ever find out who did it …). I’d known about this place for over a year so I decided to take my serrated knives & my Shun to them.
They did an outstanding job reshaping the tip of my Shun & sharpening my serrated knives at a charge of only $ 5 per knife & had them ready the next day. Glad I had an opportunity to use them and see the kind of work & service that they do firsthand.

The only other place I know of in the San Diego area that does knife/​tool sharpening is Greg in La Mesa, & these guys are faster, cheaper, and do a better job. That was an easy choice.

Best knife shop I have found!
This is the first knife service which I have found which can deal with serrated knives! They put a fresh serration on my worn out Henckels tomato knife (20 years new), and did the same for two serrated bread knives!
No extra charge for the serration! Just the standard sharpening fee!
Ask YOUR knife guy what he can do for your serrated knives!

I recently dropped off 4 Global knives here for sharpening. Up until recently, I’ve never even known about this kind of service (or I just never sought it out as I’ve never owned any knives that would make this worthwhile). I am so glad that I found this place because my knives are like brand new after they sharpened them. They cut tomatoes like a hot knife through butter. I ran them lightly over a paper towel and the towel is cut in half, just like the first day that I brought these knives home. I am very happy with the service and the price ($ 5 each), and I wish that I knew about this place sooner. Highly recommend!

Outstanding service, performance and workmanship. I’m embarrassed I didn’t search them out earlier. I’m the chef in my household and as such, I use my kitchen cuttery all the time. I’m telling my friends and so should you. I picked up my six knives that were extremely sharp. I returned home, picked another four knives to have them sharpened as well. You simply can’t beat the price and workmanship.

I worked on the restaurant field for many years and as a cook having a good set of knives is priceless. I have taken my knives to be sharpen many different places, it was never as good as I would have liked. Either not sharp enough or the knives would loose the cut within a couple days. Finally, I found PRO EDGE KNIFE. I just took my knives to get sharpen again after over a year! My knives were still cutting nice when I took them again. Both my husband and I use this knives all the time, we wash them on the dish washer (even though that’s bad) and still they were GREAT! I moved far from Pro Edge Knife, but I decided to make the drive anyway, because it was so worth it. I could not believe it had been more than a year since I took my knives to them. I highly recommend. Always be extra careful after you pick up your knives ;)

I went here recently to have my husband’s knives sharpened. Typically he sharpens his own knives since he doesn’t trust people with his precious cutlery. However, upon seeing the high reviews on Unilocal,we decided to give Pro Edge Knife place a try.
They did exactly what they were supposed to, they sharpened his knives and even took out a dent that was in one of the knives. The whole thing lasted maybe ten minutes and after paying $ 5 cash for each knife I was happily on my way.
I highly recommend them and will come here again for all of my future knife sharpening needs.

A treat for your knives, and your wallet!
I have a set of nice Henckels knives that I’ve owned for years and never had sharpened. They’ve gotten pretty dull, so I finally got around to getting them sharpened. Pro-​Edge is located in a small plaza, behind a Jack in the Box and next to a 7 – 11; you could easily pass by every day and never know it’s there.
The woman who mans the front was really nice. My knives were dropped off in the afternoon and were ready the next morning at 10 AM — less than 24 hours turnaround. The cost for 5 knives (including serrateds), a pair of kitchen scissors, and a two edged stiletto (why do guys always seem to own these things?) was $ 28.00. They’re cash only, so be warned.
I haven’t used the knives yet, but the edges look terrific. With this kind of quick service and the low cost, there’s no reason not to get my knives sharpened on a regular basis. And how can you not love a knife sharpening place whose motto is, «At Pro-​Edge Knife there is never a dull moment!!»
