History
Established in 2006.
I came up with the concept for Kous Kous Moroccan Bistro while growing up in the beautiful city of Marrakech, Morocco.
I always enjoyed our rich Moroccan traditions: the aroma of our slow cooked Tagines, the colors of our murals and rugs, and the sights and sounds in the marketplace. At the same time, I yearned to discover and learn from the west. I listened to international music, learned other languages, and gradually acquired a mindset that helps me to understand and embrace both worlds.
Kous Kous Moroccan Bistro is a way to share my story, and the pleasures of my country, with you. I invite you to enjoy the fragrant herbs and spices, music, and colors of Morocco and perhaps you’ll be inspired to share your stories, too.

Business Owner
Moumen Nouri moved to the US in 1996 with a culinary chef degree, a college degree in hospitality management and experience in one of the finest resorts in his hometown of Marrakech (Morocco). He then worked in several renown establishment from Cleveland, OH to Carmel, CA before deciding to settle in San Diego and start his dream restaurant.
Kous Kous Moroccan Bistro is an idea that started developing in Morocco, but got refined in the US.
Moumen discovered that despite the fact that Moroccan cuisine is one of the most healthful and sophisticated, and offers a wonderful range of flavors, it remains unknown to lot of people. One of the reasons is the service. So, he created a menu that offers a wide variety of choices of authentic Moroccan small plates, and main dishes; instead of imposing a five course «prix-fixe» dinner. The restaurant itself is set up like a European bistro, while preserving the colors and the warmth of a Moorish house.
