History

Established in 2014.

Malinalli Bakery & Bistro opened its doors on April 2014 with a simple mission, to offer authentic artisan mexican bolillos and hand rolled croissants, and the best cup of coffee. The first menu was a bit complex at the beginning, offering a wide variety of items, but chefs Alan & Veronica soon realized that the best sellers were always the tortas and croissant sandwiches and thus decided to simplify and concentrate the efforts on creating the most succulent and elitist sandwiches, always linked to the original roots but with a level of sophistication and an international twist. Many international travelers have commented that Malinalli truly deserves a couple of Michelin stars. Would that be true? Come and find out ;)

Husband and wife owned and operated small bakery and bistro, serving the San Antonio and Castle Hills TX area. They put their hearts and souls in the creation of amazing and unique dishes, house made green chorizo, corn truffle omelet and authentic french baguettes. Mexican bolillos and teleras stuffed with calamari cooked in its ink and green chorizo are just a few examples of the adventurous and sophisticated foods people will find everyday at Malinalli Bakery and Bistro. Having owned a bakery in a small town in Michoacan Mexico, where hundred years old stone built ovens are today still in operation, Alan and Veronica, with a lot of enthusiasm and years of hard work, decided to open their first bakery-​bistro in Castle Hills Texas. «We bring the best of our culinary cultures to San Antonio, the things we loved eating when growing up.
