Kings Bar – B – Que

King’s BBQ is…
I visited their new location on HWY 90 access road near Lackland AFB. The man behind the counter was stated that this location has been open for about 3 months and they’re taking some business away from Bill Miller’s down the road and around the corner.
The location is lacking in any aesthetic value and ambiance but who cares if the Q is good, right? That being said, I got mine to go.
The first thing I noticed is that he loaded my brisket and sausage link on a plate and nuked ‘em to get them hot. I inquired and was told that all their meats are smoked at their other location and then brought over. The hairs on the back of my neck began to bristle. The second thing was the sauce that he then ladled on top of my brisket and sausage. If this was baseball, he’d be in the hole 2 strikes.
The Monday special came with 2 sides, beans and potato salad, and the bread was gratis. It also came with a medium tea (the link I added myself). When I finally dug in to my lunch, I noticed that the brisket was a bit on the tough side. I usually order moist when given the choice. The meat had a nice smoky taste to it but no bark, and was sliced too thin for my taste. Overall I was disappointed with the lack of moisture from the meat, and the fact that it had to be nuked. The sausage link was a bit on the small side but was very nicely smoked with a bit of a bite to it. Not spicy hot by most people’s standards, but with a nice peppery taste. The fact that this too was nuked, also left me disappointed.
The beans had a nice beany taste but no smoke or porky taste. Again, disappointed. The potato salad was the one saving grace to the entire meal. The potato salad was just how I like it. It was rich in mayonnaise and but just enough with mustard but so little that it had no mustardy taste at all. It was definitely the hit of the party.
I can only imagine my dining experience having been different had I gone to their other location and eaten hot meat from the smoker. Unfortunately, this location imports the meat and has to reheat. This is a big no-​no in my book.
Overall, I was disappointed with the brisket and beans, but the potato salad had it going on. I’d like to try their chopped brisket but think I’ll pass on trying the ribs as reheating is just not a good idea.
