FIORE Artisan Olive Oils & Vinegars

FIORE makes artisan olive oils and vinegars along with specialty foods like pestos, dressings, and olives, too. While I knew all that before visiting them, I didn’t realize that this was a tasting room.
When we entered we were immediately greeted by a woman (who I think is one of the owners) who asked if we had been there before, and when we told her no, gave us a quick five minute speech warmly welcoming us into the shop. She encouraged us to try as much as we wanted («if you run out of dipping bread, just let me know!»).
So that’s what we did.
I worked my way from one end of the olive oils to the other. Baklouti Green Chili, Blood Orange, Butter, Chipotle, Harissa, Lemon, Basil, Garlic, Persian Lime, Tuscan Herb, Rosemary, Mushroom and Sage, Butternut Squash Seed, Japanese Roasted Sesame, White Truffle. Check.
I worked my way from one end of the balsamics to the other. Dark Chocolate, Vanilla, Blueberry, Espresso, Fig, Maple, Coconut, Honey Ginger, Summer Peach, Cranberry Pear. Check.
Then, I found a sign that suggested oil and balsamic pairings, so I worked my way through that list, too. Blood Orange olive oil and Dark Chocolate balsamic, Butternut Squash Seed olive oil and Maple balsamic, Rosemary olive oil and Fig balsamic? Check.
I tried some sun-​dried tomato pesto and some green olives with pimento. A gentleman asked us if we wanted to try any other flavors, because they would gladly open anything we wanted for samples. Sometimes people say this and you know they don’t really want you to say yes; not here. He persistently asked us to make sure we weren’t being the polite ones! We were. I regret not asking to try the green olives with lemon.
In the end we didn’t purchase anything… it got a bit crowded in the beautiful store as two large family groups came in. I’m severely regretting that empty-​handed decision (last night I had avocado smashed on toast and you know what would have made it better? a drizzle of Persian Lime, Chipotle, or Green Chili olive oil). When you do purchase something (please note: the prices here are on the higher spectrum, but so is the quality!), they pour you a fresh bottle themselves.

We were gifted bottles of Fiore at Plumrose Inn in Bar Harbor Inn in Bar Harbor (fantastic location, clean and comfortable accommodations and great breakfasts and afternoon tea)
Last night we dined at Cantina Italiana and loved the olive oil served with their breads… not knowing it was Fiore, we were doubly impressed. Also, we loved teh Scaloppini di Vitello ai Porcini, the gnocchi, and risotto

Take a good idea to the point of obsession and do it in a good way, and you’ve got Fiore. The store is full of flavored Olive Oils and balsamic vinegars infused with everything from mandarin orange flavor to dark chocolate. You’ve got to see it to believe it and it’s impossible to leave without a bottle of something delicious.
