Contemporary spin on ramen. Simple menu consists of tonkotsu, shio, and veggie miso ramen using high quality organic ingredients. All ramen served in handmade bowls with broth, noodles, meat (or lots of veggies), local organic pea sprouts, sliced radish, nori, and spring onion for $ 8. Additional toppings such as house made kimchee, organic soft boiled egg, house made black garlic oil (using aged black garlic), extra meat, house smoked Japanese eggplant, hon-shimeji mushrooms, etc. can be added. Appetizers available include house smoked arctic char salad, house made pickles, organic edamame, and house made lotus chips. Desserts include meyer lemon sorbet and genmaicha green tea ice cream — both made right here at Gaman.
