Chef On A Passport

I throughly enjoyed my experience. The experience was like a field trip for adults who love to it, and that I do! The dishes we made were easy to make, but I would have never known how simple they would be to incorporate into my daily cooking. I took the Pasta Dinner class and we made stuffed mushrooms, roasted tomato sauce from scratch (!), fresh basil and egg noodles, and panna cotta. Everything was so delicious. Now I have idea for Christmas dinner with my family. My only complaint is that we didn’t get the recipes emailed to us like the chef said they would be.

My daughter and I took the Special Pasta Dinner event this afternoon. 8 students were chauffeur driven to the Hollywood Farmers’ Market, which is a certified market which means that all vendors actually grow what they sell. Porsche pointed out the Le Cordon Bleu College of Culinary Arts in Hollywood that she attended. She gave us pointers on how to shop at farmers’ markets and buying produce and allowed us a few minutes of free time to shop on our own.
Once back at EATZ, where Porsche is also a cooking instructor, we had Mimosas and snacked on baguette slices and very fresh goat cheese in olive oil that she purchased from the market. We began with the panne cotta — yes, life is uncertain, start with the dessert! This dish needed time to set. We prepared the fresh beautiful strawberries for the dessert as well.
Each team of 2 had their own cooking station and burner. Just perfect for all of us. We made the pasta with basil and set it aside to soften. We worked on the roasted tomatoes with garlic and then the stuffed mushrooms with spinach, shallots, garlic and cream cheese, sprinkled with bread crumbs. We began the meat sauce and when the roasted tomatoes were ready, Porsche pulsated them in a food processor and added it to our meat sauce.
Our workout began as we rolled out our pasta. Yes, that was definitely a workout, but so rewarding. We all got the technique down. We learned the correct thickness of the pasta and how to cut and separate them before cooking. Definitely a good appreciation for handmade pasta!
We were then treated to a delicious meal of our own creation! Devine! Porsche will be emailing all the recipes after the class.
My daughter and I highly recommend take a great afternoon with Porsche and taking her class. She has several menus to select from and we will definitely return in the future! Thank you, Porsche — you are amazing!

Went with friends on 4÷22÷13 to Chef on a Passport on La Brea. We had the best time! Portia was fabulous in getting the best out of you whether its someone who cant handle raw meat to me hating tomatoes. We took a trip in a limo to an organic farmers market to choose fresh produce. Back at EATZ, it was mimosas and lots of giggling and fun trying to learn to chop, flour, blend and fry fresh ingredients together.
We all sat down to a yummy meal and lots of good conversation.
This is definitely a fun thing to do with good friends under the expert hands of Portia.

Loved it! Porsche is sweet and knowledgeable. Ill use all the recipes we cooked and I’m going to try to carve out time for a 6 week course with her. Also– the limo ride to the farmers market rocked!

Holy deliciousness, Batman!
We got our money’s worth in less than ten minutes. The rest of the Southern California Farmers Market class was just gravy. And lots of it. We started at Eatz, then took a van over to the fabulous Hollywood Farmers Market. Chef Porsche walked us through the farmers market and gave us helpful insights on what to look for in produce — including produce we were not buying for our class. That is information I can use all day, every day! She also shared some information with us about other nearby farmers markets.
Since we only needed a limited number of items and the farmers market is so big, she also arranged to make sure we had some extra time to roam around, explore and try some samples! Genius. I bought cheese, cheese, cheese and some fruit to go with my cheese.
When we got back to Eatz for the cooking portion of the class, she put out some of the cheese she bought at the farmers market and some sliced baguette. I can tell you that this will be a staple at all of my future dinner parties. The woman can pick ‘em.
The class began with knife instruction that even included some information I didn’t learn in my certificate series in French cooking. Awesome. She walked us through each of the steps, one by one — going at just the right pace. We sampled as we cooked, Chef Porsche gave us tips on what to look for at each stage, we talked about all kinds of issues relating to food, ingredients, dining, entertaining, etc. — and all the while, Chef Porsche kept an eye on all of us and commented at appropriate times when we were each to have moved on to the next step. The attention — even during conversation — was fantastic. The instruction overall was terrific.
And then we ate. WOW. The food was fantastic. And it was easy to make. We had leftovers and we all took them home. My husband devoured the leftovers and asked when I would be making that menu again. Soon. Very soon. Tonight, in fact.
I will be back.

I met chef Porsche during the Condensed Culinary Series at Eatz and found out about her «Chef on a Passport» classes. Porsche is pleasant and knowledgeable. I enjoyed her tour of the Hollywood Farmers Market and shopping for the «Healthy New Year» menu. After the Farmers Market we went back to Eatz cooking school to prepare the meal. I would definitively recommend this class to anyone that enjoys cooking and would like to learn more on how to select and cook with fresh and organic produce.

Porsche was extremely pleasant to work with. Her dishes were aromatic and flavorful. We made appetizers, the main course and dessert. Everything was delicious. Thank you Porsche for an excellent class !

Chef on a Passport was a really great experience for someone who wants to experience something different in Los Angeles as well as a wonderful take on a traditional cooking class. Our Chef Porsche was really excellent, patient and friendly. The class I chose took us to the Hollywood Farmers Market where we picked up a majority of the food (the cost is included in the price of the class).
I chose the cooking with wine class and was pleasantly surprised. Although having a lot of food experience, Prosche is very knowledgeable and helped me learn a lot of technique I will continue to use in daily cooking. The menu was wonderful and delicious and I will definitely be making everything again. The best part was the large portions we created which allows you to enjoy some after class as well as to take some home to eat later. The mimosas were an added bonus! Thank you again Porsche!

I took the cooking class Chef on a Passport and Chef Porsche was fantastic. We started by going to the farmer’s market and learning how to pick the right veg’s. We even got to talk to some of the local farmers. Then we went back to the kitchen and sizzled up a fabulous meal. I was able to ask all sorts of questions and I was able to cook with ingredients that I don’t usually at home. The best part was that we were able to participate in each course of the meal. Some classes you are put off onto just one dish and that is all you learn. It was really nice to be able to make the entire meal from Appetizer to Desert. She had time to come around and work with me and to answer all my crazy cooking questions that I had been building up as I have been cooking on my own. I had a great time and I am looking forward to going back to take the pasta making course.
