History
Established in 2003.
Matt Fleck and Chris Matthew Hill recently celebrated the 6th year of their partnership in Matts’ Rotisserie and Oyster Lounge. Matt and Chris, veteran restauranteurs, recognized the distinct opportunity for a steak and seafood concept on the Eastside when they opened their Redmond Town Center location.
Hands-on partners, Chris and Matt pursued their vision of a restaurant with fresh, flavorful quality food and drink and great, engaging people. At the forefront of Matts’ is the diverse and affordable menu. Chef-partner, Chris, Hill has a unique penchant for «Global» Flavors. The massive, wood-fired grill and rotisserie is the kitchen’s showpiece, putting the succulent, mouthwatering «spin» on Hill’s style.
The décor was designed to be as warm and welcoming as the staff. Upon entering, eyes go straight to the full oval bar featuring a 2 tier, crushed ice, fresh shellfish display backlit in cobalt blue amid pillars adorned with brushed copper. Matts’ Great Food, Great People!
Meet the Business Owner
Chris Matthew H.
Business Owner
Chris, a native of the Seattle area, started his restaurant career at the age of 12 as a dishwasher at the Buckeneer restaurant. After highschool, he left Seattle to attend the Culinary Institute of America in Hyde Park, New York.
Following his graduation, Chris returned to Seattle and held the saucier position at the former Mirabeau Restaurant. At the dawn of the Cucina concept Chris became the Sous Chef and was a part of the Cucina concept expansion to 11 restaurants as Chef.
In 1995, Chris relocated to Chicago for Lettuce Entertain You, a nationally recognized restaurant concept development company. For two years he worked in a number of their high volume locations before returning to Seattle in 1997, where he opened the Copper Sky Restaurant in Northgate. Shortly thereafter, he was recruited to open and later become the executive chef of Coho Café in Redmond. In 2003, Chris Matthew Hill and Matt Fleck partnered to create Matts’ Rotisserie & Oyster Lounge.
