sushiLOVE specializes in Uramaki, or «inside-out rolls», also available as Temaki («hand rolls») for half-price. Highlights include the Don’t Be Shellfish roll, featuring «sur-eel» sauce and broiled king oyster mushroom «scallops,» and the Bok Bok roll, which stars a spot-on vegan version of Pok Pok’s famous fish sauce. The menu also includes plant-based twists on classic rolls: the Avalon, California roll substitutes jackfruit for crab, and the Fresher than Fresh roll reimagines a cucumber roll with tofu cream cheese.

About Kelly McCormick:
A graduate of Seattle Culinary Academy, Chef Kelly McCormick has a strong sushi background. McCormick was personally mentored by Chef Masayo Onuki of Hama Sushi, one of the first authentic Japanese sushi restaurants in the United States. In Sept 2012, McCormick took over as Executive Chef at CC Gallagher on California’s Catalina Island. In late 2013, McCormick moved to Portland to realize his vision of providing delicious, cruelty-free, gluten-free, sustainable sushi that is exciting and accessible for vegans and non-vegans alike.
