This is a follow up to my previous review. I’ve consumed much of the meat. Two of the chuck roasts had a large bone that took up about 35% of the roast. The filet cut was extremely fatty and not a nice marbling, but chunks of fat. There were two filet cuts. The smaller cut was nice an lean, but the larger was a mess. The taste of the meat is very nice. This was my first time buying bulk beef and I was part of a group that purchased from Nays, so I just trusted the other people in the group. I have since done my due diligence and researched bulk beefs. I strongly recommend you research different ranchers and call them and ask questions about grazing, age of the cow, drying duration and how and who butchers the meat. I apparently paid a huge premium to have this delivered to Vegas from Utah. My next order is in February and I’m making the drive. For me it is worth the price, quality and time. I hope this helps.
