History

Established in 2009.

I am a former PE teacher, who is married to an internationally recognized pastry chef. We have dreamed of having our own shop for nearly 15 years. In 2009, we started producing chocolate décor (the square, curl or accent that one may find on top of the cake or dessert at a restaurant). In December of 2010, we moved our wholesale business to our current location and we decided that it would be the perfect time to expand. David Ramirez Chocolates opened to the public in April of 2011. We have 20+ different flavors of chocolate candies. We also sell biscotti, cookies, chocolate lollipops, brownies, macaroons and much, much more!

The creative genius, at Cocoa Latte, is Chef David Ramirez. Chef David graduated with a degree in Baking and Pastry Arts from Johnson and Wales University in Providence, RI. Since then, he has been the Executive Pastry Chef at five star properties in Boston, Orlando and Atlanta (he has spent the VAST majority of the last 20 years in Orlando). Chef David also competes regularly. In 2004, he and teammate Jim Mullaney took the silver medal in the first ever National Bread and Pastry Championship (which aired on TV Food Network). In 2005, he was a member of Team Llhuillier at the National Pastry Championship in Phoenix, AZ. The team won the gold medal and the right to return to Phoenix in 2006 as «Team USA». In their first ever international competition, Team USA brought home the bronze medal (this competition also aired on the TV Food Network. In 2009, David was chosen to captain Team USA in the prestigious, invitation only Coupe du Monde de la Patisserie.
