The Secrets of Ethiopian Cooking
The essence of Ethiopian cooking lies in the spices that vary from the fiery potent to the most delicate. Exotic spices and fresh herbs are cleverly combined and create the flavors that make food a delight in Ethiopia. Even more remarkable is the whole procession of vegetarian specialties, both familiar and unique.
We, at Café Colucci use the best imported organic, sun dried and traditionally seasoned herbs and spices. Our scintillating entrees are cooked to order to ensure freshness. We use the best cut of meat, fresh legumes and vegetables. We serve the most refined of all breads, Teff Injera made of finely ground imported Teff flour indigenous to only Ethiopia.
History
Established in 1991.
We have delighted the palettes of Bay area residents (San Francisco) since 1991. We believe that food is sacred and healing and thusly must be prepared with the utmost care and respect. Tradition has it one must eat with the right hand, must not be interrupted while eating, must be seated until the food tray is taken away, must wash hands before and after meals and must praise god before a meal. The Ethiopian kitchen is also mindful of religious rules in preparing meats and that food must always be shared with the less fortunate.
