Wine lovers, this is for you! Wine Disciples Enoteca, wine bar and restaurant, provides an opportunity to enjoy a wide range of wines from around the world with Italian-inspired cuisine.
Pillars of the Italian cuisine will be showcased — house-made pasta, a rotating list of olive oils served by the ounce and wood-fired pizzas. The wine list will have 200 bottles as well as a rotating selection of 20 by the glass options to allow guests to discover a range of wines.
Additionally, the mark-up will be kept lower than is customary to encourage exploration.
History
Established in 2015.
Michael Coll has opened Wine Disciples, a wine shop and wine bar, which are adjacent but separated by a wall. Each has its own street entrance. Mr. Coll was the wine director of Estiatorio Milos for many years. His wine shop is a straightforward affair offering eclectic global labels, often from smaller producers. It has a comfortable back room for meetings and tastings. The spacious brick-walled Wine Disciples Enoteca restaurant serves Italian food, including seafood crudo, pastas like pappardelle with morels, and entrees like turkey Milanese to accompany a list of about 200 wines.
The chef, Brian Leth, will merge traditional Italian recipes with dishes that take a playful approach to authenticity. «My goal is to showcase high quality products at their peak, with just the right degree of interpretation,» says Leth. The menu format is pretty classic and includes small plates as well as heartier fare. Leth will source top-quality ingredients from both local and Italian purveyors.

Wine Disciples Proprietor Michael Coll has over 25 years of experience as a Sommelier and Wine Buyer. With Wine Disciples Coll offers a new approach to enjoying and shopping for wine, bringing together on-premise, off-premise and e-commerce under one roof. Across all platforms, Coll has made the wine experience engaging and insightful, and evokes a sense of community. «My desire in launching Wine Disciples is to create a welcoming environment for customers to explore the interaction between wine and food. My hope is that guests will visit us on both sides of the wall, and virtually, to discover new wines and pairings».
