Meet the Business Owner
Paolo M.
Business Owner
Originally from Glasgow, Scotland, Paolo Montana came from the humblest of beginnings. One of 60,000 Scottish-Italians in Scotland, he began his career in the restaurant business at the age of 14, working his way through the ranks. From the front of house to every role in the kitchen, Montana was only 24 when he was promoted to GM and Executive Chef of one of the best Italian restaurants in Glasgow. He followed that success with a similar role as GM and Executive Chef at an exclusive country club hotel, where his talents catered to upscale weddings and event functions.
By 1999, Montana was ready to take his acclaimed talents to New York City, where he spent the next decade heading up a beloved Italian restaurant in Chelsea.
On July 20th, 2011, Paolo opened Incognito Italian Bistro. Bringing all his expertise from over the years, he is the executive chef ensuring imaginative and delicious cuisine.
