An award-winning and nationally acclaimed «truly Colorado» restaurant, The Fort is located in Southwest Denver, in Red Rocks Territory. Specializing in regional game, such as bison, elk and quail, as well as salmon, trout and hearty vegetarian fare influenced by American Indian and Mountain Man cuisine, The Fort sells more buffalo steaks than any other independently owned restaurant in the country. Holly Arnold Kinney, proprietress and award-winning cookbook author, leads The Fort’s creation of «New Foods of the Old West,» bringing back popular recipes from the 19th century, prepared with a twist. Listed on the National Register of Historic Places, The Fort is a full-scale adobe replica of Bent’s Fort, an important fur-trading fort originally in Southeastern Colorado (1833 – 1849).
History
Established in 1963.
Built as an adobe replica of a Colorado fur trade Fort, known as Bent’s Fort, was originally to be our family home. To pay for the construction, we turned it into a restaurant serving foods of 19th century Colorado. We researched the diaries of the pioneers and Indian tribes and developed our menu based upon this research. My father, Sam Arnold became known as an internationally known food historian, who knew James Beard and cooked with Julia Child. The Fort served the first Mondavi wines in 1965, and knew Robert Mondavi. President Clinton hosted the Summit of Eight official dinner at The Fort in 1997. Many celebrities, and families enjoy the Fort for weddings, birthdays, anniversaries, and a romantic evening out of the city. Walk back in time through the gates of The Fort, into the outdoor courtyard, with the blackfeet teepee and a bonfire burning nightly. The dramatic 90 foot high Red Rock next to the Fort is an ancient Indian sacred site, which gives you «Shinin’ Times»!

I lived and worked at The Fort when I was ten years old, and had a family pet Canadian Back bear named Sissy. As an adult, created Arnold Media Services, a national public relations firm, specializing in gourmet food products successfully for over 20 years. In 1999, joined my father in partnership in The Fort and purchased the Fort and real property in 2006 after my father passed away. My vision is to develop a Green kitchen, grow most of our vegetables, go solar. We’re a two leaf leader in sustainable practices, by the EPA. In 1999 Created Tesoro Cultural Center non-profit foundation celebrating the many cultures including Indian, Hispanic, Black and early Europeans. Tesoro leads school & group tours and has two festivals per year: Indian Market Powwow and Spanish Market & 1830’s rendezvous.
