Beef jerky has become a snack staple in America. That’s why we wouldn’t blame you if you had no idea when the craze started. Beef jerky got its origin in South America during the 1800s. The Quechua tribe, ancestors of the ancient Inca Empire, produced a meat similar to beef jerky called ch’arki, or charqui. The term literally means «dried meat.» It was made by adding salt to strips of meat from wild animals such as deer, buffalo and elk, then allowing it to dry in the sun or over fires for a stretch of time. Sound similar? We thought so. Spanish explorers arrived in the New World, where they discovered Native Americans were already making what we call jerky today. They called it «pemmican,» which was meat or fish jerky prepared with berries and/or fat. Sounds delicious. Today, jerky is made from most varieties of meat. Seasonings and spices are usually added prior to the drying process.
