The Big Cheese of Miami was started in 1984.
We started with 2 Employees & a simple small Menu. in 1984 Melvin Bratton & Alonzo Highsmith
Came in (From the University of Miami Football Team). They were enjoying some Homemade Spaghetti & Meatballs. I took Thier Picture & Hung it on the Wall. The other Customers loved to look at that Picture. We worked Long & Hard Hours but Mel & Alonzo kept bringing More Players to try our Pizza, Dinners & Garlic Rolls. Soon We were a Favorite among the Players. Local’s soon started to ‘Pile in ’ The Big Cheese. We only had room for 25 People & Lines began to form to get in. In 1989 We made plans to move Across the Street into a facility 5 X Larger. Now it has Lines to get in, Especially on the Weekends. Call for Takeout & Delivery & don’t forget that We deliver ‘Party Platters’ Almost Anywhere in South Dade. We use ‘Only the Finest ingredients ’ & Cook Everthing fresh to Order. We also became ‘Official Sponsors’ at The U. of M.

Business Owner
Bill A. & Garry D. Opened the Big Cheese in 1984. Garry helped put up the initial investment. Bill started washing Dishes in 1974 & then was hired at Parentis Pizza in 1975. After learning how to make Pizzas, Bill was hired by College Park Inn as The Pizza Man when They opened in 1977. In 1978 Bill moved to Northern California where He was hired by Dario’s Italian Restaurant in Downtown SanFrancisco. There He learned how to run a Big Operation. He learned from Italian Chefs about the Italian Dinners that Dario’s was famous for. He also continued to sharpen His skills as a Pizza Man. In 1982 Bill Returned to Miami. He used His 10 Years of experience to open The Big Cheese of Miami in 1984. Eddy C. Was hired in 1985 to work directly Under Bill & learn the Business. The Big Cheese Moved across the street in 1991. Eddy was promoted to General Manager. Garry helped with advertising & We went from 30 seats to 120. We were full within 45 Minutes. Offering Pizza, Pasta, Subs & Salads.
