History

Established in 2011.

Scalina Restaurant located in Downtown, Miami is the latest creation of Italian born Tom Billante along with Chef Enrico, who worked as executive Chef at the well known New York restaurant Scalinatella for the past 22 years and his brother Fernando, manager, formerly with Il Molino, NY, complete the trio. The menu has been perfected to offer a variety of fresh seafood’s, pasta’s and whole fish prepared in a European style. This breathtaking Italian restaurant is located inside the Related Group building owned by Real Estate Mogul Jorge Perez.

Chef Enrico Giraldo’s Bio

As a young man of 18, Chef Enrico Giraldo’s craft was sharpened under the watchful eye of New York’s well known Owner /​Chef Carlo De Gegaudenzi of La Camelia.

After ten years of honing his skills with De Gegaudenzi. He went to Italy for formal training at the Culinary School of Bergamo, when he returned back to N.Y. he perused a position as Chef.

After being the Executive Chef of 20 plus years at the well known New York Restaurant Scalinatella, He migrated South to Miami!
