When it comes to authentic Peruvian food, most people think of Ceviche. We thought of just that and did not stop there. We wanted to make it a fun and enjoyable culinary experience for everyone alike and decided to launch a fresh new restaurant concept in the heart of Kendall, named after our chef and owner Carlos Brescia’s nickname, Dr. Limon.
Our trademark is not only a personalized service, but also a fresh menu where most of the traditional Peruvian plates have been reinvented and changed into medical terms. To complement this innovative cuisine, our guests can choose from a wide variety of wines, wine-based craft cocktails, real fruit juices, and of course… desserts!

Established in 2012.
Established in 2012 in the heart of Kendall by Chef Carlos Brescia and partners Jose Antonio Combina & Fiorella Terrazas, Dr. Limon was creatively designed from scratch to go with the theme of a Medical institution. The creative theme, from the plates to the servers jackets, were all designed and created to go with one another in an all around real world theme. From the presentation of the plates to the logistics of handling a hot and cold kitchen, Chef Carlos Brescia and staff are known for the dedication and one-of-a-kind taste that you will experience with every plate as you indulge into your own delightful pleasure bite after bite. Since we use only the freshest ingredients available as well as helping our local farmers and product providers, our plates are accessible to every type of food enthusiast, Vegetarian, meat and fish lovers alike!

Business Owner
Carlos Brescia, a.k.a. Dr. Limon, is originally from Pimentel, Chiclayo, a coastal town in the North of Peru. Living right in front of the ocean got him extremely familiarized with seafood cuisine since he was a kid, learning first to fish and then to prepare his daily catch in a variety of delicious recipes. After moving to Miami in 2000, Carlos finally introduced himself completely in the culinary world, working in different oriental restaurants where he acquired the experience he would later use to create his own dishes, fusioning typical peruvian plates with international cuisines.
The rest of the story is well– known, Carlos worked for 3 years as a chef at a famous Peruvian restaurant, where he met Jose Combina, his partner in this adventure. Together, they came up with an fresh menu switching the names of most plates to medical terms. The result was a total success! Dr. Limon opened its doors in April 2012 and ever since has satisfied your cravings with the best Ceviche in Miami!
