The Mayan Café proudly serves the essential ingredients and flavors of Mayan cooking — dishes rich with smoked chilies, pumpkins seeds, lime, oil infusions & roasted meats. We source our meat exclusively from local farms and use as much sustainably-grown local produce & cheese as is seasonally available.
History
Established in 1997.
Our chef, Bruce Ucan, is a Mayan Indian from the Yucatan Peninsula in Mexico. He came to the states in 1987 and has been working in restaurants here ever since.
The Mayan Café began as a small truck out of which our chef sold tacos & salbutes. Over the years, this grew into a restaurant in Nulu, one of Louisville’s most energetic and developing neighborhoods.
Meet the Manager
Anne S.
Manager
General Manager Anne Shadle joined forces with Chef Bruce, her brother-in-law, in 2007 to create the Mayan Café. Her particular commitment to sustainability is a perfect match for Chef Bruce’s appreciation for local food. She manages the front of house staff and operations as well as designs the beverage program. Additionally, she handles all marketing and finances for the business.
