Saul Sierra, Mi Cocina restaurant owner, is very excited to take action in the cause for renewable energy. The 3.99 kilowatt (kW) solar awning structure is expected to cover up to 20-percent of the electric utility consumption, creating an annual carbon offset of 7,958 pounds of carbon dioxide (CO2). Ultimately, Saul sees his restaurant as an example business to educate the community and encourage the use of renewable resources. Saul and his family of employees have planned events and school field trips to show interested residents that clean renewable energy works.“This is the right thing to do,” says Saul Sierra, owner of Mi Cocina. Mi Cocina Mexican Restaurant has been operating in Littleton for over ten years and is known for its fresh ingredients and warm atmosphere.
