History

Established in 2008.

After doing 20 years of corporate restaurant operations and development, Rob and Diane Perez decided to open their own restaurant. The first order of business was to bring on a chef. So, Jeff Mayor, a Culinary Institute of America educated chef happened to be a friend and was interested in partnering with the Perez’s. Diane created the décor and the feel, Chef developed the food, and Rob developed the business. Together they have built a restaurant at Fayette Mall, Hamburg, and soon to come to Downtown Lexington.

Meet the Business Owner

Rob P.

Business Owner

A California farm boy fell in love with the restaurant business, and worked his way up from server to manager at Cask n’ Cleaver, a California steak and wine dinner house. He also fell in love with a little hostess named Diane and married her along the way. The next stop was Hard Rock Café, where he was General Manager of the Dallas HRC and the Orlando HRC. Next, he assumed a position as Director of Openings, where he managed opening of seven restaurants throughout the Eastern United States. Rob was with the Hard Rock for ten years, then left to become the Vice President of Operation for Disney Regional Entertainment. He worked on the concept development and operations of eight ESPN Zones across the United States. Rob gained a vast amount of experience from working six years at the Walt Disney Company, which he later put to use at Saul Good Restaurant & Pub.
