Specialties

Hamakua Mushrooms are a specialty and exotic mushroom, grown in a mixture of corncob, wheat bran and grandis eucalyptus saw dust. This mixture is called substrate. Mushrooms are carefully cultivated to grow out of a bottle, a method originally developed in Japan. This growing method was chosen after traditional hand planting was found to be too time consuming and labor intensive. Because the process can be automated, «bottle cultivation» allowed for commercial level production. This process allowed Hamakua Mushrooms to develop their signature «Ali’i» mushroom, a 2– ½ inch mushroom that has a thick, meaty, one-​inch-​in-​diameter stem. In keeping with «sustainable farming» methods, Hamakua Mushrooms recycles the substrate and sells to farmers across the island this rich mixture to boost their crops growth.

History

Established in 2005.

It has been an exciting and challenging feat, one that has brought locally grown exotic gourmet mushrooms to the Islands of Hawaii. Ten years ago it was all-​but-​a-​dream, today the dream is reality and our success should be shared. Our story is one of hard work, passion, family, and relationships… and as Bob and I look back and reflect, «We could not have succeeded without you».

As with all stories, this one has many chapters; our newest endeavor is the addition of our Hamakua Mushroom Boutique, chef event house, and guided tours. We look forward to you being a part of our ever growing and changing story.
