We specialize in the creation of gourmet grilled Cheese sandwiches all day, and Mac and Cheese (6pm — 9:00pm weekdays, 4pm-​9pm Saturdays). Our fourteen signature sandwiches, all named after Dads’ Careers may be ordered «as is» or modified in any way the consumer desires. Our mission statement is: «We at Dad’s Grilled Cheese endeavor to provide creative, tasty, cheese-​based products to our valued customers quickly, accurately, cheerfully and at reasonable prices.» We’re closed on Sundays.

History

Established in 2009.

Dad’s Grilled Cheese was the brainchild of its owner and founder Mike Pernatozzi. He had the idea for a restaurant committed to grilled cheese approximately 7 years before the restaurant opened. He had no prior restaurant ownership experience, but he knew what he liked in a gourmet grilled cheese sandwich. When the economy turned south in 2008, Pernatozzi lost his job as Director of Training and Development for Carl Icahn’s Stratosphere and associated properties. Just over a year later after serious bouts with personal health and a divorce from his second wife, Mike dusted off his grilled cheese idea and opened on December 3, 2009.

Business Owner

Michael began his working life at United Parcel Service in Pittsburgh, PA working overnight as an industrial engineer at age 19. He joined the United States Air Force in 1966 and ended up as an AFRTS Radio and TV Broadcaster, serving in Taipei Taiwan, W. Berlin Germany, and Seoul, Korea. After Discharge he spent the next 16 years as a Director of Communications for National Steel Corporation out of Pittsburgh, PA, and as a partner in his own video production/​audio production studio. The recession of 1992 forced the partnership to dissolve and Pernatozzi and his immediate family headed west for Las Vegas. He began teaching for the major hotel/​casinos: Guest Service, employment law, leadership, public speaking, etc. In 2008 when Carl Icahn sold the Stratosphere, Pernatozzi was let go as were all the vice presidents and directors. He resurrected an old idea he had for a grilled cheese restaurant and that dream came to life December 3, 2009.
