Michael began cooking/​baking 25+ years ago right out of high school. Learning under Orlando’s best chefs in private country clubs such as Orlando, Timacuan, Heathrow, Sweetwater, Errol Estates as well as some of Orlando’s finest hotels including. The world Marriott Center. Michael is «real world» experienced in the baking arts, as well as learning from the leading professionals in the industry. These teachers include Collette Peters, Nicholas Lodge, Ron Ben Israel, Edwald Notter Jean-​Pierre Webleuw, James Roselle, Baking Arts with Richard Festen, Zoe Clark from Zoe’s cakes and the famous Wilton School in Darien, IL. This experience has taught Michael how to pair different flavor profiles into world class dessert experiences, as well as the learning to basics needed to build onto more advanced techniques needed in today’s profession.
