Freddy R.
Manager
Chef Freddy Rieger began training in classic French cooking right out of high school and is a graduate of the prestigious Academy of Culinary Arts in New Jersey.
His culinary career in casino properties began with opening restaurants for the Trump Marina in Atlantic City. In 1993, Chef Freddy went to work as a chef at the Mirage Resort Hotel and Casino in Las Vegas, NV. In 1999, his profession took him to Florida where he became the executive chef at the Portofino Bay Hotel in Orlando.
One year later, he returned to his beloved northeast coast to become the Executive Sous Chef at the Trump Taj Mahal where he was promoted to executive chef.
He now oversees seven restaurants, menus for banquets, room service and meals for more than 800 employees everyday as well as maintains his own herb garden at Fantasy Springs Resort Casino.
Freddy incorporates 100-year-old family recipes, regional specialties from back East, and a menagerie of world cuisine and flavors into our restaurants.
