History

Established in 2002.

Creating confections with unusual ingredients and heavenly results is a passion of chocolate artist Karen Baihuber, proprietor of Rhapsody Chocolates and Lillieschocolate, divisions of The Chocolate Forest, LLC.

Karen’s interest in chocolate began at her childhood home and kitchen in Lancaster County, Pennsylvania, when she was 11 years old. She feels, «the best way to make chocolates is to create from the heart with love and passion. She developed her own Signature Royale Chocolate Truffle recipe in 1996, and began marketing her chocolates through her company in 2002. Each truffle represents a unique blending of liqueurs, fresh cream, French and Belgian chocolates, sweet cream, fresh fruit concentrates, champagne and other elegant natural essences. The blend is stirred for hours to create a rich and creamy ganache to fill the confections. Each portion of filling is aged for a period of 5 weeks before being slipped into the finished confection.
