We specialize in regional Italian food inspired by the tastes of Tuscany in an elegant, relaxed atmosphere. We also highlight locally grown produce, meat and cheeses from and around Columbia County.
History
Established in 2006.
Chef Mark Ganem and manager Adam Klersfeld opened Vico in 2006 with the aim of providing an authentic Tuscan dining experience using local ingredients from the Hudson Valley. Mark worked as a professional chef for many years in the Tuscan village of Vico d’Elsa, and also travelled throughout Italy in his previous position of Milan Bureau Chief for W Magazine. Adam gained his skills in customer service as manager of the Housing Works thrift store in Manhattan.

Business Owner
Mark brings a diverse professional and cultural background to Vico’s kitchen. A Summa Cum Laude graduate of Harvard University and vice president of the Harvard Lampoon under Conan O’Brien, Mark went on to a career in magazine journalism first with the men’s fashion magazine M, and then later as Milan bureau chief for that magazine as well as W and Women’s Wear Daily, where he covered fashion and culture. It was there that Mark’s love of cooking was re-ignited, and he left Milan to serve as a chef at La Volpaia, a popular bed and breakfast in Vico d’Elsa in the heart of the Chianti region. There Mark learned to work with the freshest ingredients to create a cuisine that was less about recreating familiar recipes and more about honoring the authenticity of the locally produced staples, from garden-fresh produce to artisan-crafted cheese, salumi, and wine.
