Jonathan St. Laurent is one of the finest chefs I have encountered in my world travels. I had dinner at his restaurant Uncle Billy’s Barbecue in Yarmouth, Maine a few years back and can still bring up the smoked flavored tender taste of his pork ribs. Man I need to find that guy and see what dishes he has dreamed up since my last meal with him and his lovely wife Schyla… ps I think the address in harpswell is not accurate, he has never opened up that way, I’m pretty sure. Bottom line is the guy can cook up a lot more than just Barbecue… but standing in front of a grill and smoker is most certainly his calling from the universe.
