In short, I’m very impressed with C&C’s authentic«New Haven”-style pizza. It has a thin crust, chewy on the inside but somewhat crispy on the outside. The sauce is also the genuine article: crushed ripe tomatoes without any added herbs or spices(they’re unnecessary when you have flavorful tomatoes). The mozzarella cheese is also flavorful, and they use an appropriate amount so that it does not overwhelm the sauce. I’m a Guilford resident, and apart from C&C, I’ve tried pies from 4 other restaurants in the area: Naples, Anthony’s, Pasta Avest, and The Red Tomato. The Red Tomato advertises itself as «New Haven”-style, and while it is good pizza, something is not quite right about the sauce. All of the above restaurants offer solid pizza, but for a true aficionado of «New Haven”-style pizza, C&C is the only option(apart from a trip to New Haven).
