Description

Specialties

What makes for a dining experience? Is it an expertly prepared meal or the delicious, hand crafted micro-brew that washes it down? Gilly’s makes the answer easy you get both in spades. Not only will the beer lover in you be indulged, (Gilly’s offers a variety of Brewmaster John’s brews, including Crimson King Amber Ale, Full On IPA and his famous Peanut Butter Stout) but the foodie in you will be satiated as well. Each dish on Gilly’s menu exudes a flair for both big flavors and culinary creativity. The menu provides a diverse set of options, from vegetarian delights (butternut squash gnocchi) to seafood specialties (miso honey glazed sockeye salmon), and our fresh oyster bar. Whatever you decide to nosh on, our chefs have created each dish to be paired perfectly with a select group of our microbrews. If beer isn’t your thing, you’re still in luck as Gilly’s features an award winning wine list, and extensive cocktail and martini selection. Gilly’s offers a unique and complete dining experience in an equally unique setting, smack dab within the excitement of downtown Grand Rapids.

Meet the Business Owner

Gregory G.

Business Owner

Greg Gilmore started with the family business at 23. Previously studying hospitality management at Davenport and philosophy at The University of Oregon, Gregory accepted a management position at The Thornapple during a visit home from Oregon. Shortly thereafter, The Thornapple won several prestigious awards, including Grand Rapids Magazine’s coveted Restaurant Of The Year Award. And the rest, as they say, is history. Over the next three decades, he helped spearhead a series of acquisitions that would define The Gilmore Collection as it is known today by increasing the establishment count from one to over twenty.
