If anyone is looking to buy beef in bulk, we do NOT recommend Ketchem Country Meats. We bought and paid for 190 lbs of hanging weight. 95 lbs were picked up. That is a 50% yield which is very low even given the fact we didn’t want the heart, tongue or liver. Upon pickup we were informed the 3 boxes weighed more than 40 lbs each. When we got home, the total was 91 lbs. We only got to 95 because we called to discuss this variance and the owner, Pete, admitted to misplacing some short ribs. Our instructions for butchering were NOT followed, and we will never purchase from this store again. It is a shame, because we like to support small/​local business.
