Established in 1945.
Established in 1945 after World War II. Named after Maximo Gimenez who was a Stanford educated teacher who be friended American occupations troops. A few would come to his house for a drink or two. Eventually they insisted to pay for their meals. The troops longing for home cooking, Ruby Trota, Maximo Gimenez’s niece concocted a recipe for fried chicken which the troops kept coming back for more. Eventually the chicken became a legend and with the Filipino public.
