Inspired by a mother from Mexico with many talents in the kitchen, and a work ethic instilled by my father from Maui, My background is making authentic handcrafted foods from scratch, and keeping Cultural traditions while invoking elements modern cultural interpretations.

Starting in 2005 as a Sushi prep @ Mikuni Midtown Sushi Restaurant, and eventually Sushi Chef. Received co-​employee of the year for fellow Sushi chefs my first year. Champion @ North American Trade Co. Annual Saki Fest Fast & Furious Sushi Chef Competition (2015)

In 2014 I decided to return to my roots and apply what was learned in the industry. Then tapping into the rich cultural food infuences and traditions of my heritage.
