Pascal’s Coffeehouse is dedicated to serving you quality gourmet coffee professionally prepared by our baristi. All of our coffees are organic, fairly traded, and locally roasted by Sweetwater Organic Coffee Roasters (1331 South Main Street, Gainesville). We also serve a variety of Numi organic teas as well as chai tea lattes and other specialty drinks.

History

Established in 2005.

Fun fact: the building was originally Chaucer’s Restaurant. It then became the Oxford Coffee Co. The building was gifted to the Christian Study Center later and the bar downstairs seemed perfect for a small coffeehouse production.

I’ve been a barista for two years here at Pascal’s and have grown to love and respect the coffee industry. Our approach to coffee has been and will continue to be holistic. Through our interactions with Sweetwater, we seek to understand coffee from the farms of Kenya, Bolivia, Guatemala, and others all the way to the drink in your cup that we hand to you. Coffee is more than just a drink. Each cup that we drink has economic and social implications all around the globe. Pascal’s chooses Sweetwater because their approach to coffee is the same as ours: to produce high quality beans while also respecting the integrity of the local farmers by making sure they get a fair price for their crop so that they may continue to live and produce sustainably.

Our goal at Pascal’s is to continue to push ourselves both in our understanding and our craft, striving continually to hone the art of making coffee so that we all may be proud of whats in your cup.
