What is Frozen Custard? Some typical responses are, «Is that the stuff inside donuts?» or «Is it pudding?» But usually the response is, «I have no idea!»

Frozen Custard is a gourmet ice cream that first originated on Coney Island, New York, as a carnival treat at the turn of the century. The popularity of frozen custard quickly grew and was the rage of the East Coast. Frozen custard could be found at many East Coast resort areas. Many travelers had a chance to taste the new sensation, and it quickly spread to the Midwest. Milwaukee is currently considered the «Custard Capital of the World.» The popularity of frozen custard is spreading into other regions.

To be considered frozen custard, it must contain at least 10% butterfat and 1.4% egg yolk. It is made daily and served at 18 degrees Fahrenheit. Also, there is no air beaten into the mixture during freezing. These details are what make custard different from ice cream. At Woolley’s, Brett and John formulated their own recipe which gives it a unique flavor that cannot be found anywhere else. They only use quality products for the best taste.

Woolley’s uses an «old fashioned» style custard machine. The machine continuously feeds custard mix into the barrel. The mix is rapidly frozen, with low overrun and small ice crystals, resulting in a smooth, creamy texture. The product is silky rich with flavor. Woolley’s makes frozen custard several times a day; it is best when eaten fresh.

History

Established in 2003.

Opening a frozen custard shop was at one time a joke among friends. After college graduation (UNT) and realizing that the corporate world was not for them. Brett Allen and John Wooley did just that. They quit their jobs and spent a year working on Woolley’s Frozen Custard. The pair formulated their unique recipe, and in April 2003, Woolley’s was born.

From 2006 – 2011, they had a second location in Hurst, TX until a road expansion forced them to close. They began searching for a perfect, new spot and decided on Heritage Trace Parkway during the summer of 2014.

Since Woolley’s was founded, Brett and John and made it their goal to provide a fun atmosphere, excellent service and a delicious product for your enjoyment.

John Woolley, Co-​Owner — A Springfield, Missouri native, John lived in Colorado for a short time before settling in Texas. After graduating from Richland High School, he received a degree from The University of North Texas in Denton in 2000. In March 2003, he married, Mona, a teacher for Keller ISD at the time. A few months later, John opened the first Woolleys. Since then, they have welcomed two boys and Mona now teaches in Northwest ISD. John, Mona and two sons currently live in Fort Worth, TX.

Brett Allen, Co-​Owner — A native Texan, Brett grew up in the North Fort Worth area. A Richland High School graduate, he went on to The University of North Texas and received a degree in 2000. Brett opened Woolleys in 2003 and the second location in 2006. Brett and Kelly got married in June of 2008. Kelly is a teacher in Fort Worth ISD. They are in the process of adopting a baby.
