History

Established in 2002.

Only the 13th liquor license in Evanston history, Prairie Moon owners took 20 years of traveling and cooking throughout the USA to offer customers their rich knowledge in American cooking. Soon after opening, beer became a pertinent feature in the concept of Prairie Moon and it quickly became known as Evanston’s original craft beer bar.

Started with a small seafood restaurant, Davis Street Fishmarket in Evanston, In 1990, received a B.A. degree in Hospitality from Kendall College. Opened Tommy Nevin’s, an Irish pub that truly celebrated Ireland’s culture, cuisine, and drink.

Researched the great barbecue capitals of the world to open one of Chicago’s première bbq joints, Merle’s Smokehouse, authentic, slow-​smoked barbecue to the Chicago area.

Next up, a classic steakhouse concept, Pete Miller’s Steakhouse. «Pete’s» not only served steakhouse specialties, it also became one of Chicago area’s top live jazz spots.

Soon after, Prairie Moon, opened in March 2002 and became the first craft beer restaurant in Evanston as well a destination for American regional cuisine.

Mike Hoyland, Tony Luna opened Candlelite on Chicago’s north side in 2004, and the three, along with Gavin Gillan opened Wheatberry Tavern in Buchanan, MI in 2009 and Moxee & Mad Mouse Brewery near UIC in Chicago in 2014.
