Not far from Vincent’s family home in Arles, France, Vincent studied the culinary arts at Ecole Hoteliere in Avignon. After completing his studies Vincent apprenticed under Chef Paul Louis Meissonier at the three-​star Michelin restaurant L’Hermitage in Avignon, where he was named «Best Apprentice Chef».

While vacationing in San Diego in 1976, Vincent met some young restaurant professionals. Unexpectedly, he received a phone call. The caller, a «new» friend, need a favor. The Chef de Cuisine at Mon Ami in Solana Beach was in a accident and the owners needed a temporary chef immediately. Vincent stepped in and ended up staying on at Mon Ami for the next few years delighting discriminating palates and garnering the attention of food critics. In 1980, Vincent and Bernard Hug opened Bertrand’s in Leucadia. Later, in 1982, they opened La Maison du Lac in Carlsbad. Fans followed from venue to venue never wavering in their loyalty. In 1983, Vincent co-​owed Cuisine a la Carte. in Solana Beach.
