I think the biggest problem with the Rib Shack is inconsistency. When we first ordered everything was delicious. The ribs and sauce divine, the fries fresh, the cakes were so good they put a pie person on a cake binge for 3 weeks! and the delivery was quick and courteous. Since then a variety of issues. Yes, the beans are from a can. The cole slaw is up and down, and items are often not available. My first gumbo was great, afterward the rice was undercooked. The fish is so tender it fell off my fork, lately it has been cooked in old grease. On the PRO side the employees are great. When I call for pick up they will often call to tell me its ready or bring to my car when I pull up. They will make things as you like them so don’t be afraid to speak up. I still think they are the best occupant of the A-frame that I have seen since Der Wiener-schnitzel was there. Wow, I just dated myself! I say give ‘em a try and ask for what you want. We don’t want a Panda Express or $ 1 scoop Chinese in there!

Just tried the Rib Shack. I used delivery. The fries are wonderful. Homemade. Great flavor. Had boneless pork rib sandwich. Lots of pork but a little too tough and dry. Same with pulled pork sandwich. Too dry and chewy. Sides were baked beans with seemed much like Bush’s and cole slaw, not bad but a little too sweet. Good delivery time. Friendly service. They need to fine tune their pork. I would give them another chance just for the«to-die-for» fries.

Not being able to decide what sounded good to eat at 9:30pm on a Monday, Jeremy and I drove down Colfax and spotted the lights on at The Rib Shack. While the parking lot was empty, the guy smoking outside assured us that the joint was open as he hurried inside. He took our order as soon as we could decide from the many options. Although they were out of a side of okra, french fries came with the chicken sandwiches. With our two to-go boxes in hand, we headed home and found, unexpectedly, that the chicken was fried and covered in barbecue sauce on a good sized hoagie bun. It wasn’t bad, but we had thought that barbecue chicken would just be barbecued, less like KFC crispy stuff in sauce. I will say the fries were delicious. So, we were hungry, the portions were huge, the chicken and sauce were all right, and the fries were good. Just know that it’s fried chicken on the sandwich if you decide to order it!

After seeing two business bite the dust in this cute a-frame drive-thru building on the ‘fax, I was hoping for someone to come-in and some good eatin’ to the neighborhood. Unfortunately, the new tenant, The Rib Shack, falls short of good. Let me start off by saying that they do have good ribs. But after that, I did not find any positives. Their cajun catfish was overcooked and their gumbo had undercooked rice and very little flavor. The sides seemed like they came out of a can. The people working there were nice and I hope they can get it together… with some better quality food.
