Rolling Smoke BBQ

This is HANDS DOWN the best bbq in Denver. The guys running it are so sweet and accommodating too. I’d put this q up against any from elsewhere. Who says you can’t get good bbq in Colorado? Perfect pulled pork… so full of flavor you dont even really need the sauce, ribs are tender but not fatty, and the burnt ends are the best. The sides are amazing too… best mac n cheese ever!

Love their tender brisket, love their spicy sausages, loooove their burnt ends (when you can get them, they won’t serve them unless they’re perfect) and I love their baked beans and smoky collard greens. But the BEST thing on their menu is the mac and cheese! Their mac and cheese is exactly how I like it — not saucy but stringy, gooey and extra cheesy! It’s a total gut bomb and I mean that in the best way possible. My husband tells me if I double the amount of cheese in my own recipe, it will come closer to Rolling Smoke’s version. Probably best if I stick to the single servings at this truck. Always happy to see these guys parked outside of my favorite breweries.

I tried Rolling Smoke while at Station 26 one afternoon. It was a very cold day, and the employees didn’t seem overly enthused to be there.
The barbecue itself was alright. I ordered the brisket and added some of the spicy BBQ sauce that they had. The sides that came with it though had much to be desired. The Mac N Cheese was very thick, but didn’t have enough of a cheese flavor. The worst though was the baked beans. They tasted exactly like (and probably were) beans from a can. They were thick and didn’t have very good flavor. The food was also kind of luke warm and not very hot. I definitely won’t get the beans again, that’s for sure.

Not only does Rolling Smoke BBQ dish out the best BBQ in Denver Terry and his crew really know how to make you feel welcome!
It has become a Saturday Tradition to go to Mile High Spirits and order a Burnt end Sandwich with a slaw in it and some Mac n Cheese On the side!
I recommend this place to all my buddies and family and Anyone who is looking for some delicious food

Highly recommend this food truck and catering company! Great to work with, fun and #1 the food is crazy good and authentically awesome!
We used them for a party of 25 today and everyone gave it rave reviews, and they arrived promptly on time as requested.
We enjoyed the beef brisket, pulled pork, Mac and cheese, amazing collards and
more!
Also, I’m from the South, and this food is as good as it gets!

5 stars for this food truck. I just ate the burnt ends, ribs, and smoked Mac and cheese. Delicious. Denver is severely lacking in providing good barbecue, but this place does not disappoint. Their sauces were tasty as well. Best bbq from a food truck I’ve ever had.

First off, I apologize for not taking a picture but I just had to eat it so quickly because it looked so amazing, I just didn’t have time!
They pulled up to Great Divide while I was there. I got the brisket sandwich with slaw on the side. Absolutely delicious. Their mustard sauce is spot on with the southern style. The brisket was perfectly charred and tender and just fantastic. The slaw was also great; it looks like they use their peppercorn seasoning they use for the meat, in the slaw. Gives it a nice flavor.
Two very nice guys operate the truck; very welcoming. I definitely recommend eating at this truck!

Rolling Smoke recently catered a work event for us and we can’t wait to hire them again. I would have taken a picture but I ate it too fast. Delicious pulled pork and my first experience with burnt ends — both extremely tender and flavorful. I was so stuffed from trying these two choices that I barely had room to try the sides. My co-​workers were quite pleased with the Mac and cheese and the bite of potato salad I had was spot on. My co-​worker even mentioned she had no idea she even liked smoked collard greens — until now!
The sweet tea was sweet without being overwhelming. Speaking of sweet — the gentlemen working this truck are the real deal nice guys. They were extremely accommodating to food allergies and menu requests, were super friendly and provided excellent and speedy customer service. Pricing was very reasonable and the portions were generous — no one left hungry…

Definitely the worst burnt ends I’ve ever had. We had a good time here at the station 26. But food was disappointing, got charged 12 bucks for three chunks of «burnt ends» — a.k.a big chunk of unchewable fat. Will never get any food here again.

We were heading to Jagged Mountain for a beer (btw the tequila barrel aged porter is awesome) and we ran into some friends who ordered the candied bacon. It was amazing! Although we just had dinner down the street, we had to order the bacon as a «dessert.» The guys running the cart were so nice to top it off. Thank you!

This is seriously delicious bbq. I come from a family of professional bbq’ers in Virginia and we have yet to find authentic bbq in Colorado. Until now. We look forward to following these guys wherever they go! Added bonus — Great customer service, very cool and friendly.

This is some good bbq. Ribs were awesome and the burnt ends were even better. Don’t forget to order up the candied bacon. Definitely a great bbq, good price & the guys were super friendly & extremely helpful.

I’ve been to a few different rolling bbq places in Denver, and Rolling Smoke BBQ simply smokes the competition. Had the brisket: tender, juicy, with a great smokiness to it that wasn’t too overpowering. The beans were solid — the green chiles in the beans are a nice touch. The mac and cheese is wonderful, also nice and smokey. Service is brisk and the array of sauces is a great touch. Hooray for BBQ!

Last month, I worked with Terry Walsh and his amazing crew for the 2^nd time. I work with a local Denver nonprofit that serves to provide outdoor experiences and science education to Denver’s underserved youth. In March of this year, Terry’s team provided us with scrumptious ribs, Mac and cheese, and coleslaw — the works — after we requested their services at almost the very last minute prior to our event (completely on our part). The Rolling Smoke team showed up early, delivered absolutely delicious food that our guests couldn’t get enough of, and at the end of the night, Terry and his team ended up flat out donating all of the appetizers we had ordered and planned to pay for, for our guests, to our organization and more directly, the youth we serve. This past May, we had them out to one of our biggest annual fundraisers of the year, and they completely blew the large catering company we had contracted with for the past decade, out of the water!
I sincerely have to praise Terry and his awesome Rolling Smoke BBQ team for having hands down, some of the best BBQ around, and equally (if not more so) important, being an ABSOLUTE pleasure to work with! Terry, and the rest of the Rolling Smoke BBQ team, are truly some of the nicest guys you could hope to meet, and our staff and event attendees are still raving about the wonderful experiences we have had with them!
