History
Established in 1993.
Native New Englander and graduate of the esteemed Johnson and Wales Culinary Institute of Providence, RI, Chef Jack Chaplin realized his dream of opening an east coast style lobster and chowder house on Valentine’s Day 1993. Jack chose to stay in the eclectic Lower Greenville neighborhood of Dallas, not far from the site of his first fine dining establishment, Chaplin’s Café, rated #6 overall by D Magazine in their top 100 list of Dallas restaurants in 1990.

Business Owner
A business associate of Jack’s since their days at City Café on Lover’s Lane in 1988, and Chaplin’s Café through 1992, Cary joined Daddy Jack’s in 1995 as a partner and overseer of the front of the house. Since then, Cary and Jack have collaborated on several other restaurants and night clubs in Dallas and Fort Worth. In 2007, along with partners, Neil Connell and Ricki Derek, Cary founded the Scat Jazz Lounge of downtown Fort Worth, named one of Downbeat Magazine’s top 100 jazz clubs in the world.
