I was so excited to see Bone in Artisan was going to be at Arts and Draughts at the CMA. We ordered a pulled pork sandwich and a brisket sandwich and neither left us in a blissful state. Too much sauce in my opinion. The Bone Chips looked pretty good and I wish I had tried those instead however I dont think it would have changes the fact that the sauces were just overwhelming. This is the third time I pass up trying the Wurst wagon and I have a feeling the day I do, I am going to regret all my past choices.

I’m from Philly and there are a lot of food trucks there. They are really convenient to go to when you’re drunk at 2am or on the side of the street on your lunch break. They are good, cheap and convenient. Bone-In is NONEOFTHESETHINGS. I’ve never seen a food truck where you have to drive way out of your way to get there, park your car, drop $ 10+ on a meal AND wait 20+ minutes in the heat for your food. This is a pure gimmick that people in Columbia will get sick of. Overall quality of the food was fine, but seriously nothing special. I didn’t get food poisoning so i’ll give it two stars instead of one.

I’m a huge fan of the Columbia All Local Farmers Market and I often find myself in Cola on Wednesday evenings so I had to try Bone-In. The first time I was still veg’n so my hubby and I split some raw fries with pimento cheese, green onions and sliced banana peppers. We got some Dr Pepper from the«Shiv Mart» across the way and OMG, it was so delicious. Fortunately, I started eating locally raised pastured animals(no factory farms!) recently, so we could enjoy a pulled pork sandwich on house made focaccia bread with raw chips and a side of cilantro lime slaw. It was amazing. Such a smoky flavor to the meat with a vinegar«sauce» that was incredible. The sauce on the pork is light but flavorful and it gives a tanginess to the smoky pork that I never imagined possible. I tried to like the slaw(I really do love slaw!) but it was dry and blah. Not a deal breaker, the rest of the meal is well worth the price. It was great to sit on the porch at 701 Whaley and listen to the guy with the guitar while we enjoyed our dinner al fresco. Again, a Dr. Pepper from the Shiv mart completed our meal. The third time the meal was every bit as good but we were so hot and tired from working all day that the focaccia seemed a little heavy — no fault of BIBBQ’s. The meat and chips were every bit as good as they’ve ever been, even though the slaw was the same. Our sweet puppy chowed down the bread(with very little remaining pork) once we got home, but the slaw isn’t worth keeping around. Sorry, but as a reformed veg’n I’m used to eating nothing but«side» dishes and life is too short for whatever it is in that little cup. BTW I tasted no lime and no cilantro(?) but ok whatever. If I could enjoy the slaw I would give 5 stars. I really want to try the cow brisket but my hubby says he doesn’t like brisket and we share everything we eat so I have to wait until he’s ready since he waited until I was ready.

The best food in Columbia. Of any kind. Period. It can be a bit hard to keep up with these folks– they’re a mobile operation, and their web & Twitter location updates are far from comprehensive. Nonetheless, if you have the good fortune to cross paths with the Bone-In Truck(and/or Buffet), thank the culinary gods for delivering you to the porcine promised land.(For impatient folks like me, they also do catering and bulk orders for pick-up.) No point going into detail about the dishes. They’re all really good, and consistently so. Yes, the price can be high– around 50% more than you’d pay for a comparable dish at your corner BBQ shack. But the quality of the ingredients, the attention to detail, and(again) the consistency make your corner BBQ shack look like a purveyor of dog food in comparison. Accept no substitute. Look for the Bone-In label.

This is not your bubbe’s brisket but oh my is it good! We flew to Charlotte from Boston and gps’d our way to the free clinic in Columbia where the food truck was parked. Loved the brisket sandwich! The blend of hoisin and other flavors was right on the money and the potato chips with dill were an added treat. This was a great way to welcome us from the(not so frozen) North and was worth the tweeting and phone call to find them.

Cola– keepin up with the times! Every major city in these United States of America, it seems, has been on the food truck band wagon for some time now! Good for Columbia for catching up with the times! Then we have our wanabee city council, so called politicians, wanting to squelch the growth and prosperity– Food Truck patrons are another type of customer that don’t necessarily want to go to a traditional brick and mortar establishment — variety is the spice of life! …jump off the soap box… The food these people put out is unique and good! I’ve sampled the BBQ beef brisket sandwich and the fish — both came with with bone chips(raw fires) and cole slaw. The Beef Brisket was good– very tender, served on a nice hearty focaccia roll. The sauce is a very thick and very sweet concoction– if I order this again I will tell them go easy on the sauce– a little goes a long way, makes the sandwich very rich! The fish was equally as good– fried crisp, tender and juicy on the inside! The slaw is vinegar based and provides a nice tangy punch! The bone chips are good and plentiful– sprinkled with, what I think was, tarragon infused vinegar? The menu and location of this truck is ever changing… one good thing is their twitter account, they are very good about letting you know who, when, and where… @artisanbbqtruck

So I’ve been trying to stop by for a while and just happened to end up a block away from them today at 11:30. That’s what we call serendipity. My first instinct was the pulled pork sandwich, but I decided to go with the smoked brisket sandwich. I haven’t had a good brisket since I was in Texas a few months ago. This particular brisket sandwich was in hoisin sauce and served on focaccia. I’ll get my one criticism out of the way first… I think the sauce was a little heavy. Hoisin is a strong sauce and it was pretty drenched in the stuff. That being said, I typically like my pork naked to really get the meat flavor. I also don’t like a lot of salt, and hoisin is a very salty sauce. Third, I only ate half the bread because I gotta watch the cal intake so that also would tone down the sauce some. So now that that’s out of the way, let’s move on. The meat itself is fantastic. A deep smoke ring with a nice level of bark. The brisket holds together well while still falling apart in your mouth. The bread is homemade and stands up to the sandwich. I am NOT a slaw fan by any means, but this is fantastic slaw. It’s not mayo base, it’s purple cabbage, probably in just a little season and cider vinegar. After a couple of bites of the rich and heavy sandwich, the slaw completely mellows your taste buds back down. I chose the salad to go with it and was pleasantly surprised. It’s just mixed greens with cucumber and a dressing, but it complements the meal well. It was perfectly dressed as well, which made me happy. Nothing worse than an over dressed salad. The guys running the truck seem hospitable and amiable. I definitely plan on revisiting and wish these guys all the best. This is the type of business that Columbia needs more of.

I’ve been dying to catch these guys since they got to Cola but couldn’t get synched up with their schedule… until this morning, when they were set up at All Local Farmer’s Market. Yum! It was just what I expected, which is a good thing because I had set my expectations for them pretty high after watching their Twitter feed and reading what they were making over the last month or two. I ordered a grilled pimento cheese & chorizo(which comes on rye), but I didn’t know that the sandwiches came with chips & red cabbage slaw, so I also ordered Bone Chips(which I probably would have gotten, anyway, since my imagination has been drooling over them all this time). The sandwich was awesome(my daughter ate half and she, too, loved it), the chips were good(she wasn’t crazy about the flavor of these), the slaw was nice consistency and flavor, but the Bone Chips were… amazing! Everyone walking by kept stopping to hover and drool over them! I’ll tell you, I saw a few people getting ribs and cornbread and they looked and smelled fantastic! I can’t wait to try those! I can’t wait to try everything, actually… These folks are fun and creative and I look forward to seeing what else they’re able to come up with. I put 701 Whaley as their location because they’re there regularly, but they have a few different spots that they set up at through the week.
