History

Established in 2011.

Named after the casual corner eateries in Spain, La Taberna features the flavors of Spain’s Basque region, Latin America, Mexico and the Mediterranean. The menu is executed by the culinary team of Enrique Cortez and Gustavo Castaneda.

Hola… I Started working in San Diego CA, after culinary school under chef Loren Villalobos Alsman-​executive chef of Tapas Picasso; working with Loren I traveled to Spain, specifically to the Basque country, Galicia, Asturias and Rioja Region-​back when Spanish cuisine was not as popular as it is now!!! After 5 years and many raving reviews from food critics in California, I decided to move to Chicago when more gastronomic events where happening. Here I opened my own restaurant, worked for Ann Sathers and developed a few brunch menus for restaurants. A few years after I met the owners of La Taberna and was asked to start this amazing concept on Spanish cuisine in UIC village/​Pilsen. Here our menu is about how we eat Spanish food in Chicago as a Latin culture. Our menu has influences of South America and the Caribbean, a little spicy with the soul of Spain and the heart of America!
