Fired Up Grill Chef Rocky Dunnam takes great pride in his kitchen. From the time he was given the reigns as Head Chef in the later part of 2009 he has built a great team of aspiring Chefs and cooks and has given knowledge to a great service staff as to not disappoint even a single guest. From the variety of «Poppa Joe’s» original recipes to his own Southwestern flair, the menu is as diverse as the palettes that dine here. Fired Up Grill also proudly serves Gluten-Free choices with most entrees including pizzas and pastas! We have also teamed with the expertise of Pro Edge Performance training to create a menu designed for those pursuing different fitness goals ranging from losing weight to muscular bulking diets. Fired Up Grill has solidified it’s staff since the open in 2009 and looks forward to creating a great dining environment, delicious food, and tantalizing drinks from our educated Mixologist for years to come.

History
Established in 2009.
After his highly publicized dismissal from Bucca di’Beppo, Owner Joe Busone became «Fired Up» to create something that corporate restaurants simply cannot… a scratch menu that can be adapted to all tastes! As a Chef himself, his passion for great food cannot be overstated and his restaurant concept that materialized into «Fired Up Grill» cannot be overlooked. He and his wife Cathy share day-to-day duties with the help of Chef Rocky Dunnam who is a family friend that they brought in to oversee the kitchen production and staff. The service team is comprised mainly of loyal servers that previously worked for Joe at Bucca and walked out in protest following his dismissal. The staff is truly a family and the style is casual… exactly what you would expect from your own family’s kitchen. Joe and Cathy really pride themselves in the fact that Fired Up Grill is comfortably eloquent and that their hands aren’t tied by corporate «suits» that haven’t even seen the inside of a restaurant.

Originally from Texas, Rocky moved with now wife Nicole to Arizona in 2007 to attend Scottsdale Culinary Institute where he later graduated in 2008. After externing with culinary great Beau MacMillan at Elements, Chef Rocky began his career in corporate front-of-house. After being contacted from friends Joe and Cathy Busone about the future opening of Fired Up Grill, Chef Rocky gladly replaced his shirt and tie with his Chef coat in his newest role as Executive Chef. Chef Rocky takes great pride in the quality and love that go into every step of every dish and sends that love to every table of «Fired Up Grill». He’s never too busy to say hello and can often be found mingling with regulars as well as new guests in the dining room. Don’t be afraid to ask for him and say hello.
