Whether it’s Our very Own Texas Brisket, Memphis Dry Rub Style Ribs, German Style Sausage or Eastern Carolina Pulled Pork; Cobb Switch BBQ uses only the finest meats and freshest ingredients to bring the pride of regional BBQ to Carrollton Texas. The Hickory Smoker is fired up daily and the sauces simmer for hours while we tend to the rest of the details. All of our sides and desserts are made with love from scratch just like you remember.

History

Established in 2009.

This barbeque joint is dedicated to the smokin’ memory of Cary Cobb, wrongly accused barbecue bandit of East Texas, circa 1881.

One otherwise non-​eventful day, Cobb casually pocketed three lumps of coal that fell from a Texas & Pacific locomotive as it chugged along the railroad siding or «switch» named after him. Two weeks later, Cobb faced a $ 5 fine for stealing coal. «Prove it,» said Cobb as he served a couple of railroad detectives slices of fork-​tender beef brisket, mouth watering dry-​rubbed ribs, and melt-​in-​your-​mouth pulled pork… all cooked over coal fired hickory wood. Thereafter, feisty citizens of Cobb Switch regularly tossed corn cobs at locomotives, just in case a train ran short of coal. Soon the story of Cobb’s delicious defiance spread all over Kaufman Country and the legend of Cobb Switch BBQ was born.
