I might as well start this by saying that Guadalajara is one of my 3 favorite restaurants to eat at on a regular basis. In and around Hoover, a lot of restaurants tend to have more of a corporate«generic» feel; Guadalajara juxtaposes this with great Mexican food and an authentic yet easily acceptable vibe. The food itself is great and is complemented by quick service. I’m pretty predictable when it comes to Mexican food and almost always get 3 – 4 Beef Soft Tacos and some Cheese Dip. Guadalajara’s tacos are probably my favorite of all the Mexican places in the area and their cheese dip is definitely above average. Another great aspect of the restaurant, and any great Mexican restaurant, are the Margaritas. Though they tend to be a little pricier than some places, they are tasty. The largest margarita is about the size of a small soccer ball and is worth trying at least once. The only down side to the drinks at Guadalajara is the lack of a pitcher option, which would keep the price on the tab down a little. In General, Guadalajara has great tacos, pretty good cheese dip and some appetizing, yet slightly pricey, margaritas.
