Broken Top BBQ is a special events and catering company based in Bend, Oregon. We specialize in wood fired BBQ from our custom smoker trailer… we feature all natural hormone free meats as well as all natural ingredients… we make everything in our custom Food Truck with the exception of the pickle and the buns for our sandwiches… our emphasis is on quality BBQ in a fairly traditional presentation… Broken Top BBQ hopes you will enjoy what only hours of slow smoking can produce…
History
Established in 2014.
Broken Top BBQ is a pet project from Chef TJ McNaBB… it is borne out of a love and fascination for BBQ and Southern Cuisine… it first debuted at the BMW Motorcycle Association Of America’s 2013 Annual Rally in Salem, Oregon at the Oregon State Fair Grounds. Catering to a crowd of 6,000 hungry bikers at the behest of organizers from San Antonio, Texas who had invited McNaBB to be a headliner at the event. «They wanted real wood fired BBQ and we definitely delivered» selling over 1,000 BBQ sandwiches a day during a two day run at the gathering. With thousands of Southern and Midwesterners waiting to be served… McNaBB knew he had an extremely marketable menu and plans were begun to transition the business to Bend full time to service the special events and Catering markets, as well as build relationships with local craft breweries. Prior to becoming a full time BBQ Pitmaster, he trained and worked in France, Asia, Southern California and Oregon before setting his sights on Bend.

Starting out as a young Chef in La Jolla, California Sushi sanctuary Tatsu Yoshi, McNaBB pursued a hospitality degree from Santa Barbara Community College. While working at the Star laden California Bar & Grill The Paradise Café on Anacapa in S.B. he began to become popular with local celebrities, catering to the likes of Steve Martin, Kathy Ireland, Joe Cocker and legendary comedian Jonathan Winters, as well as many others. An offer from older Sibling Chef Kelly McNaBB saw TJ taking a year long apprenticeship at two Michelin starred French Restaurants, L’Essentiel under Chef Jean Michel Bouvier and later at Le Mas du Langoustier on the Medeterranean island of Porquerolles… his time in Oregon has been spent with the likes of Stephanie Pearl of Eugene’s Marche… San Francisco Rock and Roll Caterer Chef Ray Sewell from Chez Ray’s and time as a food consultant and caterer for companies like Nike and Intel. Current plans include a live entertainment venue featuring BBQ & Southern Cuisine.
